Yellow split peas are grown specifically for drying and splitting. The peas are harvested and dried then split along a natural seam. Split peas are used for making split pea soup or in Britain they are used in pease pudding.
In India the yellow split peas are referred to as yellow dal. A typical recipe might include potatoes, spices (coriander, cumin and chili powder, cilantro).
