Arva Flour Mill’s Cornmeal Poppyseed Muffins

Ingredients

1 tbsp poppyseed
-
1 cup bran
-
½ cup cornmeal
-
1½ cups Arva Daisy Hard Unbleached flour

2 tsp baking soda
-
¼ tsp salt

1 large egg
-
¼ cup salad oil (light vegetable of olive oil)

1¼ cup sour milk or buttermilk
Directions
Grease or spray with nonstick coating or line with paper liners 12 muffin cups.
In a large bowl, combine dry ingredients. Make a well in centre.
In separate bowl, combine liquid ingredients. Beat to blend. Add to dry ingredients, mixing only until dry ingredients are moistened. Batter will be lumpy.
Spoon into prepared pans. Bake at 350°F for 20 minutes.
Recipe Note
To sour milk, in measuring cup place one tablespoon vinegar and add milk to make 1 1/4 cups. Let’s stand five minutes.
Variation: Orange - Glazed Muffins
1 tbsp water
2 tbsp sugar
Grated rind of 1 orange
Heat rind, water, and sugar in saucepan. Boil until clear. Using pastry brush, glaze muffins with orange rind mixture while still warm.
