An old fashioned baked bean recipe handed down through generations at the Mill. Perhaps the best baked beans you’ll ever taste.
Ingredients

One cup, Arva white beans

4 cups water
-
¼ pound bulk, pork sausage meat

1 medium onion

5 dried apricots, chopped

2 tbsp ketchup or chilli sauce

2 tbsp molasses

2 tpsp brown sugar

½ tsp salt
-
½ tsp dry mustard

1/8 tsp ginger

¼ tsp black pepper
Directions
Soak beans in water in saucepan overnight in refrigerator. Bring to boil and cook for two hours, or until tender. Drain beans, reserving liquid.
Sauté sausage, onion, and garlic until sausage is no longer pink, about 10 minutes.
Turn into casserole bowl with tight fitting cover. Add beans, 2 cups bean liquid and /or water, and remaining ingredients. Stirred to combine.
Bake at 300°F for 2 1/2 hours. If desired, brown beans by removing lid and cooking for another half hour.
