Arva’s Christmas Cake
We’re not sure how long this recipe dates back, likely early 1900’s, certainly a taste of Christmas back in the olden days when folks came to the Mill with horse and buggy! (The iron rings to tie off the horses are still present today, in case you’re so inclined)

A taste of Christmas past!
Ingredients

1 cup Butter

1 cup sugar
-
4 Eggs
-
1 lb Golden raisins

1 cup Glazed red cherries
-
1 cup Glazed green cherries

2 Pineapple rings
-
2 cups Arva Daisy Hard Unbleached flour (divided)

1 tsp Baking powder

¼ tsp Salt

¼ cup Pineapple juice
Directions
Use a 6” x 10” loaf pan. Grease and line with brown paper (known today as parchment)
In a large bowl Cream butter and sugar
Add salt and baking powder
Add eggs one at time and beat until just incorporated
Stir in 1¾ cup Daisy flour
In a separate bowl mix raisins, red cherries, green cherries pineapple rings and pineapple juice with ¼ cup Daisy flour
Stir fruit mixture into original bowl and stir to incorporate
Pour mixture into the loaf pan and cover with brown paper
Bake at 275 F for 2 hours taking care not to over cook.
Remove from oven and let cool for 20 minutes before transferring to a cooling rack to cool completely
Recipe Note
Bake 10 days before Christmas. Wrap in foil and put in a cool place.
