A johnnycake is a mix of cake, cornbread and pancake. That means you can eat this for breakfast - not that you need my permission to eat cake for breakfast. Enjoy!

A good old fashioned recipe
Ingredients

1 cup Yellow cornmeal
-
1 cup Arva Imperial Pastry flour

5 tsp Baking powder

⅓ cup Granulated sugar

1 Large egg
-
2 tbsp Salad oil (light vegetable or olive oil)

19 oz (540ml) Can crushed pineapple
Directions
Preheat oven to 425 degrees F.
In large bowl, combine dry ingredients.
In separate bowl, beat egg. Add oil and pineapple (undrained). Beat to combine.
Add liquid to dry ingredients. Beat until just combined.
Pour into generously greased 9” baking dish.
Bake for 25 minutes, or until toothpick inserted in centre comes out clean.
