This old fashioned Date and Nut Loaf is sure to satisfy your sweet tooth. This bread is moist and dense, with a texture similar to that of banana bread. It can be served as a snack or dessert and is often enjoyed with butter or cream cheese.
Ingredients

1 Cup- Chopped Dates

1 Cup- Daisy Unbleached Hard Flour

1 Cup- Brown Sugar

¾ Cup- Red River Cereal

¼ Cup- Chopped Nuts

2 Tbsp- Melted Shortening

1 tsp- Salt

1 tsp- Baking Soda

1 tsp- Vanilla Extract

2 Eggs Beaten
Directions
Preparation Directions
Combine 1 cup of chopped dates and 1 cup of boiling water and set aside to cool
Stir Together 1 cup of flour, 1 tsp of salt, and 1 tsp of baking soda
Stir in 1 cup of brown sugar, ¾ cup of uncooked Red River cereal, and ¼ cup of chopped nuts.
Blend in cooled date mixture with 2 eggs (beaten), 2 tbsp of melted shortening, and 1 tsp of vanilla extract.
Baking Directions
Beat mixture for about half a minute. Turn into a greased 9x5 inch loaf pan. Bake in a preheated 350 degrees fahrenheit oven for about one hour. Makes 1 loaf
Recipe Note
Add a dash of cinnamon or nutmeg to make it a spiced date and nut loaf!
