I like the quality of the Arva flour and as a type 2 diabetic I did not want to give up toast with my eggs at breakfast. In researching I discovered that both Spelt and Emmer flour are lower on the glycemic index than regular flours.

This is a perfect sub for regular wheat in any application-sourdough or any other baking. One of my family members is not celiac, but does not do well with regular flour so whenever they are visiting, I use this spelt flour and it is wonderful.
I use the Arva Spelt flour in several of the sourdough breads I bake. It works extremely well in a Spelt, Whole Wheat & Rye loaf as well as a Whole Wheat Spelt loaf.
