Allan R. I've been baking bread for over 50 years, and this is some of the worst flour I've used. It has hardly any strength at all. I have to use 15% more flour that usual in each batch because the flour just does not absorb moisture. I can't get a windowpane no matter how much I try to strengthen the dough through autolyse/kneading/stretching and folding after resting. My experience with the Red Fife flour is the same.
