Le gâteau de Noël d'Arva
On ne sait pas exactement quand cette recette remonte à la nuit des temps, probablement au début du XXe siècle. Elle rappelle certainement Noël d'autrefois, quand les gens venaient au moulin en calèche ! (Les anneaux en fer pour attacher les chevaux sont toujours présents aujourd'hui, si vous le souhaitez.)

Ingredients

1 cup Butter
-
1 cup sugar
-
4 Eggs
-
1 lb Golden raisins

1 cup Glazed red cherries
-
1 cup Glazed green cherries
-
2 Pineapple rings
-
2 cups Arva Daisy Hard Unbleached flour (divided)

1 tsp Baking powder

¼ tsp Salt

¼ cup Pineapple juice
Directions
Use a 6” x 10” loaf pan. Grease and line with brown paper (known today as parchment)
In a large bowl Cream butter and sugar
Add salt and baking powder
Add eggs one at time and beat until just incorporated
Stir in 1¾ cup Daisy flour
In a separate bowl mix raisins, red cherries, green cherries pineapple rings and pineapple juice with ¼ cup Daisy flour
Stir fruit mixture into original bowl and stir to incorporate
Pour mixture into the loaf pan and cover with brown paper
Bake at 275 F for 2 hours taking care not to over cook.
Remove from oven and let cool for 20 minutes before transferring to a cooling rack to cool completely

Bake 10 days before Christmas. Wrap in foil and put in a cool place.
